After a week-long journey talking to Latinos about their hopes and fears in this election year, I left Las Vegas and traveled nearly 3,000 miles across seven states before reaching Mitla Cafe in San Bernardino, known for its iconic hard-shell tacos. Established on Route 66, the restaurant has a rich history, inspiring the founder of Taco Bell and remaining a beloved local institution. Facing challenges in recent years, the new owners have revitalized the business, attracting a new generation of fans and preserving a piece of Latino culinary history in the Inland Empire.
