Australian pulse crops have the potential to provide nutritious food for sectors such as the defence force and aged care, which could help diversify markets and strengthen domestic industries. Peter Wilson, director of Wilson International Trade and a Queensland pulse grower, emphasized the need for the industry to explore new markets beyond traditional supermarket supply. During the University of Western Australia’s Institute of Agriculture’s 20th Annual Industry Forum on July 8, he highlighted that institutions like prisons, hospitals, and aged care facilities represent a significant annual market worth up to $50 billion. Wilson noted that pulses can help meet nutritional benchmarks while reducing meal costs in these sectors. With Australia producing between three and five million tonnes of pulses annually, there is a unique opportunity to enhance the food system by integrating lentils, chickpeas, and other pulses into institutional diets.

The aged care sector alone serves between 220 and 330 million meals each year, valued at $1.5 billion to $3.5 billion, presenting a substantial market opportunity for pulse crops. The push for using pulses in institutional diets aligns with increasing regulatory requirements for nutritional standards in these facilities. As the agriculture sector seeks to innovate and respond to economic pressures, diversifying food sources can also help reduce dependency on imported protein alternatives like soybeans, which are often criticized for their environmental impact. This shift could enhance food security and support the local agricultural economy in Australia.
