In southern Tunisia, Latifa Frifita leads a women-driven initiative centered on camel milk, launching the country’s first camel milk pasteurisation unit, ChameLait, in 2023. This project, supported by biochemist Amel Sboui’s patented pasteurisation method, aims to improve local economies by promoting camel milk’s health benefits while addressing high unemployment and poverty rates in the region. As demand for the product grows, Frifita plans to expand operations and establish a camel milk collection center by 2025, transforming this overlooked commodity into a valuable resource for southern Tunisia.
