Researchers at the University of Tokyo have developed the largest single piece of lab-grown meat to date, a chicken nugget-sized chunk measuring 7 cm by 4 cm by 2.25 cm and weighing 11 grams, reported in Trends in Biotechnology. Led by biohybrid system engineer Shoji Takeuchi, the team utilized an artificial circulatory system with semipermeable hollow fibers to deliver nutrients and oxygen, allowing for the growth of a coherent piece of muscle tissue rather than small fragments. Despite this breakthrough, challenges remain, including the non-edibility of the hollow fibers, prompting researchers to explore automation or edible alternatives.
