A study by researchers from Radboud University and KCMC University explored the health effects of Tanzanian men switching from a traditional Kilimanjaro diet to a Western diet heavy in processed foods. After just two weeks, participants gained an average of 5.7 pounds and showed increased inflammatory proteins and reduced immune response. Conversely, those who switched from a Western to a traditional African diet experienced positive metabolic changes and reduced inflammation, underscoring the health benefits of traditional diets amidst rising Western dietary influences in Africa.
