Researchers at Louisiana State University have developed a special coating that can extend the shelf life of raw eggs. The color of a chicken yolk is dependent on the hen’s diet, with foods rich in carotenes and xanthophylls producing a darker yolk. Some companies artificially boost yolk color with additives like marigold and paprika. For the most nutritious eggs, look for labels indicating pasture-raised or free-range chickens. Cage-free and pasture-raised are not equivalent.
