Once taboo, more Japanese women are brewing sake

In OKAYA, Japan, sake brewer Mie Takahashi, one of the few female toji in Japan, oversees the traditional sake-making process at her family’s brewery, Koten, which dates back 150 years. The gradual breakdown of gender barriers and mechanization in the industry have allowed more women to work in sake production, contributing to the survival of the declining Japanese sake industry. Takahashi’s passion for sake-making and dedication to her team highlight the importance of inclusivity and camaraderie in the brewery, as they strive to find new markets both domestically and abroad to remain competitive in the changing landscape of the industry.
